Chocolate Chunk Biscoff Cookies + A Throwback

Hello friends!
I cannot even tell you how excited I am to share this cookie recipe with you today, because I swear it is the best cookie that I have ever made. But first I felt like doing a throwback Thursday post since I haven’t done one in a while.

As I was saying yesterday I am obsessed with So You Think You Can Dance, so in honor of that- here is a couple of pictures from the dance team I was on back in high school. We danced at all of the basketball and football games and also competed in state and national competitions. Every February we would go to Orlando for Nationals and competed in jazz and hip hop. Watching SYTYCD makes me miss dancing so bad ):

Okay now onto the real star of the show…If you make these (which you better) go ahead and put on your stretchy pants because you will not want to stop eating these. They are like little bites of heaven and melt in your mouth.

I tried these cookies two ways: Half with oats and half without. Personally I preferred the cookies WITHOUT the oats, Stu liked them better WITH- so really it is just your own preference. I will say that BOTH turned out amazing, so you can’t really go wrong.

Chocolate Chunk Biscoff Cookies

- 1/2 C. butter, softened
- 1/4 C. Truvia
- 1/4 C. brown sugar
- 1 tsp. vanilla
- 1 egg
- 3/4 C. Biscoff spread (You could also use peanut butter)
- 1 1/2 C. flour
- 1 tsp. baking soda
- 3.5 oz Dark Chocolate Bar, chopped
* 1 C. oats (optional)

- Preheat oven to 375
- In a large bowl beat butter and both sugars until creamy.
- Add vanilla, egg and Biscoff.
- In a separate bowl stir together flour and baking soda.
- Add dry ingredients to wet and beat until completely mixed. Stir in the chopped chocolate (and oats if you choose to use them.)
- Roll into 1 inch balls and bake for 7-9 minutes.
